Goat Cheese ... Chicken ... Spinach ...

I've got a TON of leftovers in my refrigerator, and a hankering for some goat cheese.

So, I found this recipe  for Goat Cheese, Chicken and Spinach Pasta.  Looks delicious, but I don't have quite all of the ingredients ...

Instead of the shallots I threw in a couple of tablespoons of minced white onion and a big clove a garlic.  I had about half a box of radiatore pasta, so I just cooked that up.  I mixed the pasta, about 2 cups of diced grilled chicken breast (again, leftovers) and about 1/3 of a bag of fresh spinach.

So yummy.  So, SO yummy.  But my little kids still won't touch it.
